WHOLE RED SNAPPER ON AUGUST 1
Today a bought a fresh whole red snapper from Florida at Fairway. $5.99 a pound. the whole fish was 5 lbs. after weighting it the fishmonger cleaned and scaled the fish for me. I decided to prepare it a la Veracruzana. first I cleaned it again an sniped off the side fins and the tail, because the tail wouldn’t fit in the baking dish, but now I think i should have left the tail on anyways. Then, I marinated the creature for 30 minutes in a mixture of garlic, lemon, cloves, pepper, salt, oil and water while i worked on the rest of my ingredients. After 30 min. i removed it from the marinade and patted dry and seared the fish on a hot pan with a little oil on both sides for a few minutes and removed the fish from heat. in the same pan i sautéed some onions and garlic, oregano,cumin, bay leaves,Hot peppers and red bell peppers, paprika, chopped tomatoes, 1 Tsp. of tomato paste, 1/2 cup of white wine and 1/2 cup of chicken stock. after 10 or 15 minutes I added crushed pitted olives and capers and cooked for a few more minutes. then poured all on a baking dish laid the fish on top of the red veg stew and stuffed the fish with it. covered the whole dish with a big sheet of aluminum foil and baked in the oven at 300º for 15 minutes. as a side i made this green spinach couscous with cilantro, lemon zest, butter and green peas. it was all very good.
