MASHED POTATOES CASEROLE, SAUTEU BOY CHOY AND TENDERLOIN
I went to Fairway today and found a great deal on the whole tenderloin. it was about 10 lbs. a piece. so I bought the whole thing and butchered my self. i cut it into medallions and wrapped them around with a strip of bacon and froze them. i got 12 servings out of it.
tonight we seared two of them, all around and until the bacon was crisp in the cast iron skillet and finished them in a 300º oven for 15 minutes. they came out perfectly medium rare and very juicy. As a side we sautéed some very nice fresh baby bok choy with garlic and served atop of a shallot and pepper sauce and we also made a mashed potato casserole, with lots of sharp shredded cheddar cheese, sour cream, cayenne pepper and chives and baked at 375º until it had a nice golden crust. very good dinner.
