He!. we love making these. marinated skirt stake seared over a very hot cast iron skillet, onion and pepper slices cooked in the same skillet after the steak was put to rest. then sliced against the grain. so soft and nice.  Accompanied by a quick guacamole, and warm flour tortillas. good.
