BACON WRAPPED SCALLOPS + CHILEAN SEA BASS AND SUPER STUFFED POTATOES ON JULY 19
Claudia found these great sea bass fillets that I prepared by crusting it with breadcrumbs , sprayed some olive oil and baked in the oven at 300º for 15 minutes, served with a caper-butter-shallots and white wine sauce and a side of stuffed baked potato. these potatoes were great also. i partially cooked the whole potatoes in a steamer pot. then i cut of the top third and scooped them out. then brushed some melted butter in the hollowed shells and baked them in the oven at 400º for about 20 minutes. this made the potato shells very crisp. took out of the oven then mixed the out mashed flesh with more butter, sour cream and grated gruyere cheese, salt and pepper and stuffed the potato shells with this mix. sprinkled more cheese on top and back into the oven for an other 15 to 20 minutes.
as an appetizer, we did these bacon-wrapped sea scallops, pan seared. and a sauce made with sour cream lime and chives.
all paired with sauvignon blanc.
very good dinner indeed.
