BUTTERNUT SQUASH, CARAMELIZED ONIONS, CHORIZO AND GOAT CHEESE GALETTE ON JULY 14

Two days ago I found this very nice butternut squash and last night we decided to prepared a galette with caramelized onions, goat cheese and crispy chorizo. A galette is a French round or free form flaky pie crust that can be filled with a savory or sweet fillings. After some online research we found a very good recipe at Smitten Kitchen.  We used less butter (3/4 stick of butter) and add crispy chorizo and goat cheese instead of Fontina. If you don’t have Cayenne pepper try Chiplote powder.[br]

We also prepared a “Vino blanco con durazno”, a typical Chilean summer drink, which is simply 1 bottle of Sauvignon blanc, 3 to 4 peaches cut in small cubes, 3 drops of orange flavor,  and simple syrup to taste. Serve it with ice after 2 hrs on the fridge.
