Ha! My pre-pre birthday dinner.

didn’t feel like cooking very much, but claudia had brought a nice bottle of champagne.  so I  thawed two of those tenderloin medallions while boiled a couple of medium russet potatoes, then seared the beef medallions in a hot pan for 3 minutes per side and put in a medium heated oven ( 300º), to finish off for about 20 minutes. after boiling the potatoes for 5 minutes, pressed them thru a sieve, and beat the mash with a little butter and salt. when the steaks were ready , i pulled them out, and placed them on a dish with aluminum foil to let them rest. and made a sauce in the same pan with some butter that i poured over the meat. but it was a little to greasy at the end. I feel I could have done a lot better if i had just tried. at least the champagne was very good.
