POROTOS GRANADOS ON AUGUST 2

PorotosGranados

Porotos granados- the very typical chilean summer bean soup. so good.

made with fresh beans that you buy still in their pods. the closest to this kind we have found here are the fresh cranberry beans. Part of the fun on this dish is gathering with some one in the kitchen shelling these fresh beans out of their pods. we got about 2 cups.   Since they are fresh and soft, there is no need to soak them at all. the rest of ingredients is a fresh corn , a cup of diced yellow squash, diced onions, garlic salt and basil . all is simmered in water or stock until the squash and the beans are soft and cooked, about 30 minutes. add the chopped basil at the end of the cooking time and stir in. serve in a bowl and drizzle with very good olive oil and freshly cracked pepper..
