Today was a beautiful warm summer day. we decided to take our dinner out to the roof. “al fresco”. I made these sandwiches “to go” in a big toasted soft bun filled with big slices of delicious summer tomatoes, sliced pan seared NY strip steak, and a big gooey blob of three different melted cheeses. Barros luco is the name of a similar sandwich, very popular in chile, and named after an old politician (Ramon Barros Luco) who used to order something like this at his social club all the time, and made it localy famous.
